Chive and Cheddar Cottage Cheese Egg Bites

 

Packed with protein, these egg bites make a satisfying breakfast that will keep you energized all morning long.

  Mexican-Style Street Corn

 

 

Ingredients:

 

2 tbsp (30 mL) Organic Meadow Salted Butter, melted

8 eggs

1 cup (250 mL) Organic Meadow Cottage Cheese

1/2 cup (125 mL) Organic Meadow Half & Half Cream

1/2 cup (125 mL) shredded Organic Meadow Old Cheddar cheese

1/2 cup (125 mL) jarred roasted red pepper strips

3 tbsp (45 mL) finely chopped fresh chives, divided

1/2 tsp (2 mL) salt

1/2 tsp (2 mL) black pepper

1/4 cup (60 mL) Organic Meadow Regular Sour Cream

 

Instructions:

 

1.  Preheat oven to 350°F (180°C). Generously brush 12 standard muffin cups with melted butter.
2.  In large bowl, whisk together eggs, cottage cheese and cream until smooth. Stir in cheese, roasted red pepper strips, chives, salt and pepper.
3.  Pour eggs mixture into prepared cups.
4.  Bake for 30 to 40 minutes or until set. Let cool for 5 minutes before removing from pan.
5.  Top each egg bite with 1 tsp sour cream and sprinkle remaining chives on top.

 

Tip: Substitute Cheddar cheese with Gruyère or Swiss cheese if preferred.
