- 1lb Organic Lean Ground Beef
- 1 1/4 cup Organic Meadow Plain Kéfir
- 6 Tbsp. Organic Meadow Cultured Butter
- 1/3 cup Organic Shallots - chopped
- 3/4 cup Organic Mushrooms - washed and sliced
- 1/4 tsp. Ground Nutmeg
- 1/8 cup Fresh Tarragon
- To Taste Salt and Pepper
- 1/4 cup White Wine
- 2 Tbsp. Parmesan Cheese
In a large fry pan, melt half the butter. Add the shallots and sauté for 3-4 minutes. Be sure not to burn the shallots. Add the ground beef and some salt and pepper while cooking. Once beef is fully cooked, place in bowl and set aside.
In the same pan, melt the rest of the butter and increase the heat slightly. Add the mushrooms and the tarragon. Cook for 5 minutes, reduce the heat and add the nutmeg.
Once the heat is reduced, add the kéfir and ensure that it fully mixes with the mushrooms without coming to a simmer.
Once the kéfir is fully mixed, add the beef and shallots to the pan and mix well. Add the wine, parmesan and some salt and pepper if desired. Continue to mix the sauce over low heat for 4 minutes.
Serve immediately over your favourite cooked pasta.
