  • What is the culture used in cultured (unsalted) butter?

    The culture in Organic Meadow butter is Lactococus lactis.

  • Is your Butter Pasteurized?

    Yes, the milk used to to make our butter is pasteurized.  It is, however, not homogenized.

  • What is the fat percentage in your butter?

    The butterfat is 80% for both the salted and cultured butter.

  • Do we add colour to our butters?

    Absolutely not.  We never add colouring to our butter. 

     

    You may find, however, that the colour does vary between the seasons.  During the summer months the cows are out on pasture so the cream that makes our butter contains more beta-carotene, which gives it a deeper yellow colour. 

     

    During the winter months the cows are eating a diet consisting of pasture and some grain that has been in storage.  Their milk will contain less beta-carotene which will give the butter a lighter yellow colour.

  • Can Organic Meadow butter be frozen in order to extend its shelf life?

    Yes!  We actually recommend freezing our butter, if you are not going to be using it immediately.  Freezing butter ensures that it stays as fresh as possible until you are ready to use it.  Here are some storage recommendations:

     

    Refrigerated:  Store Organic Meadow Salted Butter between 1-4 degrees Celsius for up to 4 months and Organic Meadow Unsalted Butter between 1-4 degrees Celsius for up to 2 months.

     

    Frozen:  Store Organic Meadow Salted Butter and Unsalted Butter below -10 degrees Celsius for up to a year.
